Pesto Chicken Spinach Salad

Yield: 2 servings

What You’ll Need:

  • 1 pound of chicken breast
  • 1/4 cup of olive oil
  • 1 tablespoon of Italian seasoning
  • Salt and pepper
  • 8 oz. jar of pesto sauce
  • 1/8 cup of lemon juice
  • 8 oz. of fresh spinach
  • 1/4 cup of pecans, chopped
  • 1 pint of cherry tomatoes, halved
  • 4 oz. of fresh mozzarella cheese pearls
  • A few tablespoons of freshly grated Parmesan cheese

What You’ll Do:

  1. Marinate your chicken breast in olive oil, Italian seasoning, salt and pepper, and about 1/4 of the pesto from your jar. Grill until cooked through.
  2. Combine remaining pesto with lemon juice to create salad dressing.
  3. Add your spinach, pecans, cherry tomato halves and mozzarella cheese pearls to a large bowl and drizzle dressing over top. Toss to combine.
  4. Once chicken is cooked and rested, chop up and add to salad. Toss freshly grated Parmesan cheese over top, along with additional salt and pepper to taste!
