Since having Thomas, I’m all about the easy meals these days! This light, summery Pesto Chicken Spinach Salad is also delightfully easy!
Pesto Chicken Spinach Salad
Yield: 2 servings
What You’ll Need:
- 1 pound of chicken breast
- 1/4 cup of olive oil
- 1 tablespoon of Italian seasoning
- Salt and pepper
- 8 oz. jar of pesto sauce
- 1/8 cup of lemon juice
- 8 oz. of fresh spinach
- 1/4 cup of pecans, chopped
- 1 pint of cherry tomatoes, halved
- 4 oz. of fresh mozzarella cheese pearls
- A few tablespoons of freshly grated Parmesan cheese
What You’ll Do:
- Marinate your chicken breast in olive oil, Italian seasoning, salt and pepper, and about 1/4 of the pesto from your jar. Grill until cooked through.
- Combine remaining pesto with lemon juice to create salad dressing.
- Add your spinach, pecans, cherry tomato halves and mozzarella cheese pearls to a large bowl and drizzle dressing over top. Toss to combine.
- Once chicken is cooked and rested, chop up and add to salad. Toss freshly grated Parmesan cheese over top, along with additional salt and pepper to taste!
