Authentic Argentinian Empanadas

One of my best friends from college is originally from Argentina, and I was first introduced to delicious, homemade Argentinian empanadas when I visited her in Winston-Salem for her birthday one year! I pretty much immediately fell in love with the flaky crust and savory, unique flavor of the filling.

Later on, that friend and I spent a semester abroad together studying in Sevilla, Spain. When we weren’t busy loving our lives in Sevilla (seriously, it was the best time ever), we were making the most of temporarily living in Europe and traveling whenever we could. One of the many trips we made that semester was to London, England where we stayed with Miranda’s cousin, Nico. Miranda and Nico hadn’t seen each other in a few years, and Nico wanted to host a little get-together at his flat so his friends could meet his cousin. It was decided that we would make empanadas for the get-together.

So that is how I came to get my hands on this delicious, authentic recipe! I love these empanadas because they work as a main dish, as a side, or as an appetizer, and they’re delicious warm or cold. My family members are all big fans of the dish too–my step-dad especially! Making the dough is a little time-consuming, but it is so worth it. Try it out and let me know what you think!

Turkey Butternut Squash Chili

The best part about working for the university that I work for is that we get a nice loooong winter break! I spent the first part of break hanging out with all the family that was in town and celebrating all the Christmas traditions that we have, but I have spent the past couple of days whipping up a bunch of meals that freeze well so that dinners can be a breeze when I go back to work in the new year! First up: turkey butternut squash chili.

Thanks to a crockpot and lots of veggies, this tasty meal is guilt-free and easy as pie to make. Easily make it vegetarian by omitting the turkey and substituting chicken broth for vegetable broth!

Grandma’s Italian Wedding Cookies

The holidays mean traditions, yummy foods and tons of family time. One of my favorite holiday events combines all three of these things–cookie baking at Grandma’s. Every year, the girl cousins go to my grandma’s house to make cookies for all of our family gatherings over the holiday season, including these delicious Italian Wedding Cookies. This recipe was originally belonged to my grandmother’s mother so this recipe has now been tried and approved by four generations!

These cookies are definitely time-consuming, but they are worth it!

Crack Pretzels

A former coworker of mine introduced me to Crack Pretzels, and like the name suggests, I was addicted! I modified her recipe and bit and made a batch for my family, and now they expect me to bring Crack Pretzels whenever we all get together. Luckily, they’re so easy to make that I don’t mind!
