Soups are one of my favorite meals to make! I love how my whole apartment smells good while the ingredients simmer together, and I always feel comforted eating a big bowl of hearty soup. I am okay with eating soup at any time of the year, but soup in the fall and winter is obviously the best. The weather dipped into the 80s this weekend, so I got a little excited about upcoming fall weather…and minestrone soup was the outcome! This soup freezes great, so try out this flavorful, filling and healthy recipe today to get you excited for fall!
Okay, y’all, this is one of my all-time favorite recipes! Adapted from Southern Living, this stew is savory and good for the soul. It is an absolutely perfect dish to whip up on a cold, gloomy day while you’re waiting for spring to finally come around! Try it out and let me know what you think.
Fall is here–AKA the best time of the year!! Cooler temps, football, pretty leaves, pumpkins, the NC State Fair…and plenty of crockpot recipes!! Here is my first of many crockpot recipes of the season–Lentil Soup. Full of veggies and flavor, this one is a fall staple. Luckily for me (since I didn’t half the recipe and am only cooking for one), this soup also freezes nicely!
Is anyone else super sick of winter? January through early March has always been my least favorite time of the year, because I am always so tired of cold weather and so ready for springtime! It’s been an especially chilly, rainy day here in NC, so I decided some homemade comfort food was in order for dinner–white chicken chili.
As a born and bred Raleighite, I don’t do snow. In fact, no one around here does–our collective inability to handle snow gained national attention a few years back.
