Unfortunately for all of us, we’ve got a while to go until spring officially comes to the South! Fortunately for us, there are so many delicious soups to make in the mean time. Here’s my take on a classic: Chicken and Wild Rice Soup!
One of my best friends from college is originally from Argentina, and I was first introduced to delicious, homemade Argentinian empanadas when I visited her in Winston-Salem for her birthday one year! I pretty much immediately fell in love with the flaky crust and savory, unique flavor of the filling.
Later on, that friend and I spent a semester abroad together studying in Sevilla, Spain. When we weren’t busy loving our lives in Sevilla (seriously, it was the best time ever), we were making the most of temporarily living in Europe and traveling whenever we could. One of the many trips we made that semester was to London, England where we stayed with Miranda’s cousin, Nico. Miranda and Nico hadn’t seen each other in a few years, and Nico wanted to host a little get-together at his flat so his friends could meet his cousin. It was decided that we would make empanadas for the get-together.
So that is how I came to get my hands on this delicious, authentic recipe! I love these empanadas because they work as a main dish, as a side, or as an appetizer, and they’re delicious warm or cold. My family members are all big fans of the dish too–my step-dad especially! Making the dough is a little time-consuming, but it is so worth it. Try it out and let me know what you think!
Here is another healthy, delicious, easy-to-make, easy-to-freeze meal! Creamy tortellini soup (with spinach!)
Who doesn’t like a good Philly cheesesteak sandwich?! I made these a while back for Cody’s and my anniversary dinner, and they did not disappoint. I made them as open faced sandwiches, because there’s no sense filling up on carbs when there is steak, cheese and veggies to be had!
I am a big fan of meal prepping. For me, it’s the best way to ensure I eat healthy meals throughout the week and spend less money going out to eat! I have a couple meals that I make fairly pretty often (stir fry, taco bowls, various crockpot-made meats accompanied by vegetables…), but I’m always looking for new meals to add to the rotation. That’s where this dish comes into play. Inspired by a Southern Living recipe I recently saw, this meal is healthy, flavorful and super quick and easy.
Soups are one of my favorite meals to make! I love how my whole apartment smells good while the ingredients simmer together, and I always feel comforted eating a big bowl of hearty soup. I am okay with eating soup at any time of the year, but soup in the fall and winter is obviously the best. The weather dipped into the 80s this weekend, so I got a little excited about upcoming fall weather…and minestrone soup was the outcome! This soup freezes great, so try out this flavorful, filling and healthy recipe today to get you excited for fall!
