I am a big fan of meal prepping. For me, it’s the best way to ensure I eat healthy meals throughout the week and spend less money going out to eat! I have a couple meals that I make fairly pretty often (stir fry, taco bowls, various crockpot-made meats accompanied by vegetables…), but I’m always looking for new meals to add to the rotation. That’s where this dish comes into play. Inspired by a Southern Living recipe I recently saw, this meal is healthy, flavorful and super quick and easy.
Soups are one of my favorite meals to make! I love how my whole apartment smells good while the ingredients simmer together, and I always feel comforted eating a big bowl of hearty soup. I am okay with eating soup at any time of the year, but soup in the fall and winter is obviously the best. The weather dipped into the 80s this weekend, so I got a little excited about upcoming fall weather…and minestrone soup was the outcome! I am by no means a vegetarian, but I do happen to enjoy a lot of vegetarian food. Cody just can’t understand why I eat tofu if I don’t “have to”–but the answer is simply because I like it!! I don’t think tofu tastes anything like meat, but that doesn’t mean I don’t think it tastes good (not to mention how good it is for you!) So although black bean burgers don’t taste anything like a real juicy burger, that doesn’t mean it’s not delicious in its own right. In fact, even Cody agreed that these burgers were pretty tasty!
Latin American food is definitely one of my guilty pleasures! Anyone who knows me knows that queso is one of my favorite foods (especially after I have a drink or two in me…!), and I love a good taco. The problem with going out to a restaurant for Latin American food is that I typically gorge myself with queso, chips, margs and more and then I’m left feeling quite unhealthy. So that’s where this dish comes in!
