Turkey Butternut Squash Chili

The best part about working for the university that I work for is that we get a nice loooong winter break! I spent the first part of break hanging out with all the family that was in town and celebrating all the Christmas traditions that we have, but I have spent the past couple of days whipping up a bunch of meals that freeze well so that dinners can be a breeze when I go back to work in the new year! First up: turkey butternut squash chili.

Thanks to a crockpot and lots of veggies, this tasty meal is guilt-free and easy as pie to make. Easily make it vegetarian by omitting the turkey and substituting chicken broth for vegetable broth!

Crockpot Cilantro Chicken Tacos

Latin American food is definitely one of my guilty pleasures! Anyone who knows me knows that queso is one of my favorite foods (especially after I have a drink or two in me…!), and I love a good taco. The problem with going out to a restaurant for Latin American food is that I typically gorge myself with queso, chips, margs and more and then I’m left feeling quite unhealthy. So that’s where this dish comes in!

Crockpot Lentil Soup

Fall is here–AKA the best time of the year!! Cooler temps, football, pretty leaves, pumpkins, the NC State Fair…and plenty of crockpot recipes!! Here is my first of many crockpot recipes of the season–Lentil Soup. Full of veggies and flavor, this one is a fall staple. Luckily for me (since I didn’t half the recipe and am only cooking for one), this soup also freezes nicely!

Coconut Cashew Chicken Curry

Hi friends!! Sorry I’ve been slightly MIA. Between a little traveling and some other things going on in my life, it’s been hard to find time to blog. Luckily, this Coconut Cashew Chicken Curry is a recipe worth waiting for.

I loooove Indian food, and I love curry. This dish is hearty, savory, creamy, and not tooo spicy (because I’m a bit of a spice wimp). And did I mention you make it in a crockpot?! You literally just dump all of your ingredients into the pot and come back a couple hours later to a flavorful, delicious dish that looks like it required way more effort than it did. Try making this incredibly easy dish, and prepare to impress your friends and family!
