Hi friends!! Sorry I’ve been slightly MIA. Between a little traveling and some other things going on in my life, it’s been hard to find time to blog. Luckily, this Coconut Cashew Chicken Curry is a recipe worth waiting for.
I loooove Indian food, and I love curry. This dish is hearty, savory, creamy, and not tooo spicy (because I’m a bit of a spice wimp). And did I mention you make it in a crockpot?! You literally just dump all of your ingredients into the pot and come back a couple hours later to a flavorful, delicious dish that looks like it required way more effort than it did. Try making this incredibly easy dish, and prepare to impress your friends and family!
If I could only eat one meal a day for the rest of my life, I would totally choose brunch. Brunch means lazy weekends with family, friends, mimosas and yummy breakfast food that no one ever has time to make on a normal day.

Anyone who knows me knows that I am a HUGE fan of all things Carolina, but I am especially fond of my alma mater’s basketball team. Our team has had a rough couple of seasons due to injuries, academic scandals and just bad luck, and I’ve loved and supported Roy’s Boys through it all! But this year was supposed to be our year. We had the experienced seniors, depth from our bench and all the pieces needed to finally bring another national championship banner back to Chapel Hill. And we were SOOO close to getting that banner!! So when we lost everything this team and its seniors have been fighting for for the past four years on a wild buzzer beater, it hurt. It still hurt today, and it’s probably going to hurt for a while! I honestly think I will always get a little pang of “what might have been” in my stomach when I think back on this team and this season.
