Mama’s Mashed Potatoes

Mashed potatoes are definitely one of my favorite holiday foods! My mom is always in charge of this dish for our family get-togethers, but I volunteered to make the mashed potatoes for a Friendsgiving celebration. Now that I’ve made this dish, I do not envy my mom’s yearly task…preparing this dish takes some time and some arm muscles! But the end result is worth it. My potatoes didn’t turn out quite as pretty or as smooth as my mama’s since I got a bit lazy in the peeling process and mashing process…but they were just as tasty, if I do say so myself!

Sheet Pan Rosemary Shrimp and Veggies

I am a big fan of meal prepping. For me, it’s the best way to ensure I eat healthy meals throughout the week and spend less money going out to eat! I have a couple meals that I make fairly pretty often (stir fry, taco bowls, various crockpot-made meats accompanied by vegetables…), but I’m always looking for new meals to add to the rotation. Minestrone Soup

Soups are one of my favorite meals to make! I love how my whole apartment smells good while the ingredients simmer together, and I always feel comforted eating a big bowl of hearty soup. I am okay with eating soup at any time of the year, but soup in the fall and winter is obviously the best. Black Bean Burgers

I am by no means a vegetarian, but I do happen to enjoy a lot of vegetarian food. Cody just can’t understand why I eat tofu if I don’t “have to”–but the answer is simply because I like it!! I don’t think tofu tastes anything like meat, but that doesn’t mean I don’t think it tastes good (not to mention how good it is for you!) So although black bean burgers don’t taste anything like a real juicy burger, that doesn’t mean it’s not delicious in its own right. In fact, even Cody agreed that these burgers were pretty tasty!
